Having been topping the dps meters in ICC of late, I have taken it upon myself to impart some knowledge about the combat rogue to whoever might find it useful. While our 20/51/0 talent tree is at the moment pretty much set in stone to achieve optimal dps, there are other things that can be done as far as gear/gems/professions that can be utilized to further increase this number.
I chose jewelcrafting back in BC because it was a new profession, not realizing how helpful (not to mention lucrative) the profession would become later in the game. While it may not seem like much, the additional stats that the 3 jewelcrafter gems ad is actually quite significant. Not only can they be used to close in gaps for such things as hit rating and expertise to reach the caps (315 hit rating with 5/5 precision and 132 exp. rating with 2/2 weapon expertise), but also to increase the all important stat of Armor Penetration (ArP). 3 JC ArP gems will effectively add 42 ArP (a little over 2 extra gem slots) which is equivalent to 3%.
I chose Engineering as a second profession because of my inclination towards PvP, but also because the "tinkering" which was added recently (basically enchants for engineers). It allows the cloak to be enchanted for 1 more agility and a parachute, boots will increase speed and add 24 crit rating (as opposed to 12 crit and 12 hit from icewalker), and it also gives gloves a 1 minute cooldown 12 second duration haste buff which adds 10.37% haste. Adding this to Heroism, Speed potions and the haste given from Lightning Reflexes (not to mention timing its use with trinkets and other such buffs) and dps increases dramatically.
If Engineering isn't your style, Enchanting would be another great route to take for the enchanter only ring enchants which provide a slight AP boost, or Blacksmithing for even more sockets (combining this with JC adds even more lethal potential) or Tailoring for the cloak enchant or leatherworking for a better bracer enchant. The thing is, professions can be used very specifically to not only increase damage, but to enhance particular playing styles, so choose based on what you think will be best for you.
Beyond professions, I would suggest (if you haven't already) creating a very detailed 'wish list'. I created a spreadsheet in Excel outlining all the stats, bonuses, etc. along with the names of the pieces of gear and where they drop or how to get them. For the purposes of this post, I suggest keeping the list limited to non-heroic ICC 10 an 25 man drops, as well as frost badge vendor gear. Leave any gear that you already have on the list blank in the last column. For example:
